If you have some of our delicious Rainbow Carrots piling up in your crisper drawer here is the perfect recipe for you! Delicious as a side dish for lunch it’s great to pile on top of salad greens (everyone in the break room will be jealous!). Toasted Pecans from Pecan Point Farm and dried Cranberries are delicious ingredients. The key to this salad is the dressing, you can change up the seasoning to pair with any meal.
Prepare the Dressing, blend together and refrigerate:
1 cup Yogurt, we like the Golden Yogurt from Pecan Point Farm because it has freshly juiced Turmeric and Ginger.
1/4 cup Sour Cream OR Mayonnaise
Salt and Pepper
1-2 teaspoons of other spices to taste, we like Curry and Paprika
Grate 6-8 Carrots on a large box grater or use a food processor. You want to have three cups of Carrots, the Rainbow
ones make a beautiful salad!
Lightly toast 1/2 cup Pecans.
Assemble salad by mixing Carrots, 1/2 cup Dried Cranberries, toasted Pecans and Dressing. Because the Carrots and Cranberries have a natural sweetness and the Golden Yogurt is lightly sweetened we don’t add extra sugar. You may want to taste the salad after refrigerating for 30 minutes, at that point if you like you can add a drizzle of honey or sprinkle of sugar.
