We do enjoy a lot of stir-fry dishes here at the farm because they are so versatile: whatever veggies we have leftover at the end of the week go in and the result is always satisfying. Here is a favorite new flavor combo we are enjoying with the terrific Broccoli crop this year.
.
1. Wash, trim and chop Broccoli (use the florets and the stems) and Vidalia Onions, prepare Rice (or Noodles).
2. Prepare seasonings, mix together: 2 Tablespoons Fish Sauce; 2 Tablespoons Sweet Chili Sauce; 2 teaspoons Red Curry Paste; 1 Tablespoon Garlic; 2 Tablespoons Rice Wine Vinegar.
3. Stir Fry Broccoli and Onions in 1 Tablespoon Peanut or Vegetable Oil until they are just tender-crunchy. Add the seasonings and heat through, serve immediately with prepared Rice.
We like to add Tofu, Beef or Pork if we have it and other veggies are great in there, too.
