Tomato Basil Vinaigrette
Toss one pint of washed Grape Tomatoes with a little Olive Oil, season with salt and pepper. If you like you can slice them in half but it’s not necessary. Spread Tomatoes out on a lined sheet pan, bake at 350 degrees for 10-15 minutes until soft and just starting to brown, allow to cool. In a blender combine roasted Cherry Tomatoes, 1/2 cup Olive Oil, 1/4 cup Vinegar, blend until smooth. Check for seasoning, add salt/pepper/honey to taste. Just before serving blend in a handful of fresh Basil until smooth.
