This is a refreshing salad, light and flavorful. We make it or variations of it (just use whatever other vegetables you have on hand) whenever we have Fennel.
Slice equal amounts of Fennel, carrots, radish, snow peas and Vidalia Onion into thin strips. For the Fennel use the whole “bulb” after you trim the end off and the bottom end of the leaf branches. Add torn or chopped Fennel leaves, too. Toss vegetables together with your favorite vinaigrette and serve on top of prepared lettuces.
