3-4 cukes, sliced
3-4 slices fresh ginger
1/2 c white or rice wine vinegar
1/4 c sugar
1/2 c water
1 Tbsp sesame oil
toasted sesame seeds (optional), for garnish
Combine ginger, vinegar, sugar, water and oil in a saucepan and bring to a boil. Pour over the cucumbers, and marinate (overnight is good, although we usually don’t work that far in advance and marinate for about an hour). Garnish with sesame seeds. Enjoy!
