- Cut Acorn Squash into 1″ slices. It is not necessary to peel the Squash, the peel is actually edible and delicious!
- Cut seeds out of cavity, drizzle with Olive Oil just to coat and season with salt and pepper. We also like to add other spices like Cumin, Paprika, Curry Powder, etc.
- Grill Acorn Squash rings for 3-4 minutes per side or until just a little tender, place on serving platter and cover.
- They will steam a little to finish cooking, these can be served hot or room temperature.
