If your eaters are picky, try blending up the sauce, the flavors are fantastic and you’ll likely win them over!
- Wash trim an chop Vegetables: Squash, Eggplant, Onion, Sweet Pepper, Tomatoes and Garlic.
- Saute until tender in 2T Olive Oil, season with salt and pepper. Add 1 cup liquid (water, wine or broth) cover and simmer for 10-20 minutes.
- Prepare Pasta of your choice while the Sauce is cooking.
- Wash, trim and chop Basil.
When sauce has cooked down (Veggies will almost “melt”) stir well and check for seasoning. Toss with Pasta and serve with grated cheese and chopped Basil. For Meat Lovers you could add Ground Sausage or Pork, too.
