To prepare:
- Toss Grape Tomatoes with a little Olive Oil, season with salt and pepper, spread on a sheet pan, bake at 350 degrees for 10-15 minutes until soft and just starting to brown.
- In a blender combine roasted tomatoes, salt and pepper to taste, 1/2 cup Olive Oil, 1/4 cup vinegar, blend until smooth.
Keep in the fridge for up to a week.
