8 cups Bread, cubed
2-3 cups Milk or Cream
1 pound Bacon, sliced and cooked
1 cup finely chopped Onion
1 large bunch Mixed Greens, washed, trimmed and chopped(Spinach, Chard or Kale)
1 cup grated Cheese
Salt and pepper to taste
- In a large skillet heat 2T Olive Oil, add prepared Mixed Greens and Chopped Onions, sauté over medium high heat until just wilted. Allow to cool.
- In a large bowl whisk together Eggs and 2 cups Milk (reserve one cup to add if necessary). Add cubed Bread, season with salt and pepper, mix gently and allow to rest so Bread soaks up Egg mixture.
- Check soaked Bread for texture: should be like a wet sponge, some liquid when pressed. If a little dry add up to another cup of Milk. Stir in cooked Bacon, cooked Greens/Onions and Cheese until just mixed, do not blend too well (bread should still be in cubes). Re-season with salt and pepper.
- Pour into a baking dish, dot top with Butter. Bake uncovered at 325 degrees for 25-30 minutes or until knife inserted in middle comes out clean.
