- Wash, trim, core and chop 2-3 Tomatoes, preferably at least two colors.
- Trim, peel and chop 1/2 of each Red Onion and Vidalia Onion.
- Wash, trim and chop 1 medium Cucumber.
- Wash and chop 2-4 Tablespoons fresh Basil.
- Combine all in a bowl and dress with 2 Tablespoons Olive Oil, 1 Tablespoon Apple Cider (or other favorite) Vinegar, salt and pepper to taste.
Allow to marinate and chill in the fridge for 20-30 minutes before serving.
